Watson had a year to run on his deal at the Sydney Roosters, but has been released.
The 21-year-old had also been in talks with the Wests Tigers but the opportunity to play five-eighth worked in the Knights’ favour.
The utility, who can play five-eight, hooker and fullback, was among the Roosters’ best in a 28-4 win over the Knights on Friday.
“Connor is an exciting young talent who has plenty of great football ahead of him,” Knights chief executive Matt Gidley said in a statement. “There is no doubt Connor will grow with our team and be a great addition to the club.”
Watson joins Kalyn Ponga, Tautau Moga and Aidan Guerra as new arrivals at the Knights in 2018. Broncos prop Herman Ese’ese is also expected to sign with the NRL battlers.
“It has been pleasing to announce a number of signings for next season, as we continue to build our squad with a mix of local juniors, emerging talent and experience,” Gidley said.
